Chocolate-Covered Peanut Butter Balls

  • Ingredients

    130g SKIPPY® Smooth Peanut Butter
    180g butter 
    200g icing sugar 
    225g plain chocolate chips 
  • Instruction

    1. Line a baking tray with baking parchment. In a medium bowl, combine the peanut butter and 120g butter; beat together until blended. Gradually stir in the sugar.
    2. On a chopping board or flat surface, knead the peanut butter mixture until smooth. Shape the mixture into 48 small balls. Arrange the balls on a baking tray. Refrigerate for 30 minutes.
    3. Meanwhile, in a 14-cm (1-litre) saucepan, melt the chocolate chips and the remaining 60g of butter over a low heat, stirring occasionally.
    4. With two forks, dip the balls into the chocolate. 
    5. Return to the baking tray. Refrigerate for 1 hour or until firm. Store in a tightly covered container in the refrigerator.
