Chicken with Savoury Peanut-Sesame BBQ Sauce

  • Ingredients

    90g SKIPPY® Smooth Peanut Butter
    120 ml water
    60 ml red wine vinegar or cider vinegar
    2 rounded tablespoons light brown sugar
    2 tablespoons soy sauce
    1 tablespoon peanut or vegetable oil
    1 teaspoon toasted sesame seeds, if desired
    1/2 teaspoon ground ginger
    4 boneless, skinless chicken breasts (565g)
     
  • Instruction

    Preheat the barbecue.
    To make the peanut-sesame sauce, in a 14-cm (1 litre) saucepan, combine all the ingredients except the chicken. Bring to the boil over a medium heat, stirring constantly, for 1 minute. Reduce the heat to low; simmer, stirring frequently, for 1 more minute.
    Cook the chicken, turning and brushing occasionally with 120 ml peanut/sesame sauce, for 12 minutes or until the chicken is thoroughly cooked. Serve with the remaining sauce.

    This recipe serves 4.
