Oriental Peanut Noodle and Vegetable Salad

    225g whole wheat linguine
    120 ml light sesame ginger vinaigrette
    5 tablespoons SKIPPY® Smooth Peanut Butter Spread
    1 tablespoon orange juice
    105g thin strips cucumber
    425g carrots, cut into strips
    35g chopped fresh coriander
    35g chopped spring onions
  • Instruction

    Cook the linguine according to the directions on the pack; drain. Rinse under cold running water until completely cool. Meanwhile, in a large bowl, combine the vinaigrette, peanut butter and orange juice; mix well. Add the remaining ingredients; toss to coat.
