Ingredients

  • 115g butter (plus another 115g at room temperature)
  • 55g brown sugar
  • 95g sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 170g plain flour
  • 4 digestive biscuits, crushed into crumbs
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 130g icing sugar
  • 90g SKIPPY® Smooth Peanut Butter
  • 275g milk chocolate chips

Directions

  1. Cream together 115g butter, caster sugar and brown sugar in a food mixer until smooth. Add the egg and vanilla.
  2. In a separate bowl, whisk together the biscuit crumbs, flour, salt and baking powder. Slowly add the dry mixture to the wet mixture on a low speed until combined.
  3. Spread the dough into a greased 23-cm square glass baking dish. Bake for 20 minutes at 175°C, or until lightly golden on top. Allow to cool.
  4. Using an electric hand mixer, mix the peanut butter, icing sugar and 60g of butter together. Press evenly onto the biscuit layer.
  5. Place the chocolate chips and the remaining butter in a microwaveable bowl. Heat for 30 seconds, stir, heat for 30 more seconds, and stir again until smooth and melted. Pour over the peanut butter layer.
  6. Allow to cool completely. Cut into bars to serve.
